Pansit is the ultimate party in a bowl! This classic Filipino noodle dish features thin rice noodles tangled up with proteins like pork, chicken, turkey, and beef, plus a veggie crew that’s always ready to join the fun. It’s like Chinese Lo Mein’s cooler cousin!

How to make Vegetarian Pansit Recipe: The Noodle Party Edition!?

Ready to throw a veggie fiesta in your kitchen? Let’s whip up a Vegetarian Pansit that’s so good even your meat-loving friends will be begging for a taste! Just remember, the only thing missing here is the meat, so grab your tofu if you’re feeling adventurous!

Ingredients

  • 500 grams 500 Chicken Breasts (the star of the show!)

  • 250 grams 250 King Prawns (The magical creatures of the seas!)

  • 8 oz 8 Rice noodles (the skinnier, the better for slurping!)

  • 2 tablespoon 2 Soy sauce (the life of the flavor party)

  • 1 cup 1 Vegetable broth (because we like our noodles hydrated)

  • 1 cup 1 green cabbage, shredded (for that crunchy goodness)

  • 1 1 Onion, sliced (cue the tears!)

  • 1 cup 1 Carrots, julienned (the orange cheerleader)

  • 1 cup 1 Bok choy, chopped (the leafy superstar)

  • 1 cup 1 green beans, trimmed (the green brigade)

  • Optional: tofu, cubed and sautéed (the undercover protein agent)

Set by Step Directions

  • Noodle Time! Boil those rice noodles according to package instructions. Once they’re soft and cuddly, drain them and set them aside like they’re taking a well-deserved nap.
  • Veggie Sauté Dance: In a large pan or wok, heat a splash of oil (I like extra virgin olive oil) over medium heat, add the King Prawns, cook until they turn pink. Then take out the pan and set aside on a separate plate.
  • Add the chicken breast into the pan until cooked then add the onions and sauté until they’re translucent. Don’t worry, we’ll save the tears for later! Toss in carrots, garlic and cabbage letting them party in the pan for a few minutes until they start to soften.
  • Flavor Explosion: Pour in the soy sauce and vegetable broth like you’re dousing the dance floor with flavor. If you’re feeling fancy and using tofu, toss it in now for extra fun!
  • Noodle Mix-Up: Add the cooked noodles to the pan and toss everything together like you’re creating a noodle masterpiece. Let it cook for a couple more minutes so those noodles can soak up all that deliciousness
